Ingredients
Oats & dates
50 g oats
3 dates
10 ml almond milk
Pancake batter
2 eggs
150 ml almond milk
150 ml sunflower oil
85 ml vegan vanilla yogurt
Splash of orange blossom water
0,5 tsp honey
150 g flour
16 g baking powder
1 tsp cinnamon
Toppings
Vegan yogurt
Amlou - Moroccan almond spread
Grated coconut
Instructions
Blend the oats into a fine flour and set aside.
Remove the pits from the dates and blend them with 10 ml almond milk. The mixture does not need to be completely smooth.
Crack the eggs into a bowl and mix briefly.
Add the almond milk, sunflower oil, vanilla yogurt, orange blossom water, date mixture and honey. Mix for 30 seconds to 1 minute.
Add the cinnamon and the oat flour. Sift the baking powder over the bowl and gradually sift in the flour. Mix briefly, then switch to a spatula to keep the batter light and airy.
Heat a non-stick pan over medium heat. Bake the pancakes until golden on both sides. Cover them immediately after baking to keep them warm and soft.
Serve the pancakes with yogurt, amlou and grated coconut.
