Ingredients
Date paste
A handful of dates
50 ml almond milk
3 tsp amlou - Moroccan almond paste
Cookie dough
175 g vegan butter
100 g powdered sugar
200 g flour
16 g baking powder
A drizzle of orange blossom water
Topping
Powdered sugar - amount to taste
Instructions
Heat the almond milk slightly. Remove the pits from the dates and soak them in the warm milk for 15-20 minutes.
Blend the soaked dates with 30 ml milk and the amlou until you get a smooth paste. Set aside.
In a bowl, knead the butter together with the powdered sugar until smooth. Add the flour and baking powder gradually until the mixture becomes crumbly.
Add the orange blossom water and knead until it forms a smooth dough.
Shape the dough into small balls and place them on a baking tray lined with parchment paper.
Press each ball horizontal and vertical with a fork to flatten slightly.
Bake the cookies for 10-15 minutes in a preheated oven at 200 degrees. Let the cookies cool completely.
Spread the date paste on the bottom of one cookie and place another cookie on top to form a sandwich.
Dust with powdered sugar and use a small brush to create decorative stripes.
