Ingredients
Chicken
250 g chicken breast
2 cloves garlic
1 shallot
1 red pointed pepper
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp turmeric
½ tsp ground ginger
1 tsp ground cilantro - Buhara brand
Sambal – to taste
Fresh cilantro – to taste
A splash of olive oil
150 g breadcrumbs
Bulgur
2 tomatoes
3 tsp tomato paste
500 g bulgur
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika powder
Sambal – to taste
1 tsp turmeric
1 tsp ground cilantro - Buhara brand
1.5 L boiling water
Instructions
Add the chicken breast, roughly chopped shallot, garlic, red pepper, spices, sambal, and olive oil to a food processor. Blend until smooth.
Gradually mix in the breadcrumbs until the mixture becomes firm.
Shape the chicken mixture into long, kebab-style rolls and press them firmly around skewers. Carefully slide the chicken off the skewers and place them on a plate. Repeat until all the mixture is used.
Heat olive oil in a pan and add the chicken kofta. Gently press with your finger to create a pattern if desired. Cook on both sides until fully done and golden. Set aside
Add a bit more olive oil to the same pan and add the roughly chopped tomatoes. Cover and cook until softened.
Lightly mash the tomatoes and mix in the tomato paste, spices, and 0.5 L boiling water. Cover and let simmer for 5 minutes.
Stir in the bulgur for a few seconds, then add another 0.5 L boiling water. Mix again and add the final 0.5 L boiling water. Cover and cook until the bulgur is tender.
Serve the bulgur topped with the chicken kofta and optionally garnish with fresh cilantro.
