Ingredients
Peach mixture
2 peaches
1 tsp pure honey
Splash of lukewarm water
Pancake batter
2 eggs
8 g vanilla sugar
2 tbsp brown sugar
150 ml almond milk
150 ml sunflower oil
250 g flour
16 g baking powder
Toppings
Pure honey
Half a peach
Instructions
Peel and chop the peaches and place them in a small saucepan. Add the honey and a splash of water. Cook over medium heat for about 3 minutes, stirring regularly.
Blend the peaches using an immersion blender or regular blender and let the mixture cool completely.
Crack the eggs into a bowl and mix with the vanilla sugar and brown sugar.
Add the almond milk and sunflower oil.
Strain the cooled peach mixture and add it to the batter. Mix for about 1 minute.
Gradually sift the flour into the bowl. Sift in the baking powder all at once. Mix for 30 seconds, then switch to a spatula to keep the batter light and airy.
Heat a non-stick pan over medium heat. Pour the batter into the pan and cook the pancakes until golden on both sides. Repeat until all the batter is used.
Serve the pancakes with a drizzle of honey and a fresh peach on top.
