Ingredients
Salmon
4 salmon fillets
A splash of olive oil
1 tsp salt
1 tsp paprika powder
1 tsp garlic powder
0,5 tsp black pepper
1 tsp sambal
1 tsp maple syrup
1 lemon
Mashed potatoes
1 kg red potatoes
1,5 l boiling water
1 tsp salt
1 tsp black pepper
50 g vegan butter
150 ml almond milk
Topping
Fresh coriander - amount to taste
Instructions
Mix the olive oil, maple syrup, sambal and spices in a large bowl. Add the salmon fillets and let them marinate briefly.
Slice the lemon and place the slices in a baking dish lined with parchment paper. Lay the salmon on top of the lemon slices. If there's any marinade left, pour it over the salmon.
Bake the salmon in a preheated oven at 230 degrees for 20-30 minutes, until cooked through and beautifully glazed.
Peel the potatoes and place them in a pan with boiling water, making sure they are fully covered. Cook until tender.
Drain and add the salt, pepper and butter. Gradually pour in the almond milk and mash until smooth and creamy.
Serve the mashed potatoes topped with the salmon and finish with fresh coriander.
