Ingredients
Fish
3 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp turmeric
1 tsp garlic powder
0,5 tsp ground ginger
Sambal - amount to taste
500 g mixed fish - shrimp, salmon & unseasoned cod pieces
100 g red bell pepper, chopped
Fresh coriander - amount to taste
200 ml tomato sauce
100 ml boiling water
Rice
400 g rice
1 tsp salt
1 tsp black pepper
0,5 tsp butter - lactose-free
1 l boiling water
Instructions
Heat the olive oil in a pan and add the spices and sambal. Stir briefly so the spices release their aroma into the oil.
Add the mixed fish and chopped red bell pepper and stir gently to coat everything well. Cover the pan and let it cook for 10 minutes.
Add the coriander, tomato sauce and boiling water. Cover the pan again and let it simmer until the fish is fully cooked. Taste the sauce and adjust the seasoning if needed.
Meanwhile, cook the rice in a seperate pan with salt, black pepper, butter and boiling water until fully cooked.
Finally, add the cooked rice to the fish and gently mix everything together.
Let it cook for another 3 to 5 minutes on low heat so the flavors can combine.
