Ingredients
Batter
2 eggs
8 g vanilla sugar
2 tbsp granulated sugar
150 ml almond milk
150 ml sunflower oil
100 ml vegan vanilla yogurt
A splash of orange blossom water
Pinch of orange zest
50 ml freshly squeezed orange juice
250 g flour
16 g baking powder
1 tsp cinnamon
Toppings
Honey
Orange slices
Shredded coconut
Instructions
Mix the eggs with the vanilla sugar and granulated sugar in a bowl.
Add the almond milk, sunflower oil, yogurt, orange blossom water, orange zest and freshly squeezed orange juice. Mix for 30 seconds to 1 minute.
Gradually sift the flour into the batter. Sift in the baking powder and cinnamon all at once. Mix until smooth. After about 30 seconds, switch to a spatula to keep the batter light and airy.
Heat a non-stick pan over medium heat. Spoon the batter into the pan and cook the pancakes until golden on both sides. Repeat until all the batter is used.
Serve the pancakes with honey and a thin slice of orange. Cut a small slit from the center to the edge of the orange slice so you can twist it halfway for decoration.
Finish with a sprinkle of shredded coconut.
